Prickly Pear Cactus can grow up to 7 feet tall in clumps of pads that grow upon each other and are covered in tan to green spikes. The green cactus forms a flower that is often yellow, but can be at times purple. The pads are edible and once boiled taste similar to green beans, and its fruit makes for a fine dessert popular in parts of Mexico.
